Cranberry White Chocolate Chip Cookies

You’ll need: ¾ cup of unsalted butter, ½ cup of brown sugar, ½ cup of white sugar, 1 Tbsp of vanilla extract, 1 egg, 2 cups of all-purpose flour, 2 tsp of cornstarch, 1 tsp of baking soda, 1 cup of dried cranberries, 1 cup of white chocolate chips, a pinch of salt

Step 1: In a mixer, beat together the butter, brown sugar, and white sugar until light and fluffy. Then, beat the vanilla and egg into the mixture.

Step 2: Next, beat in the flour, cornstarch, baking soda, and a pinch of salt. Mix until a soft dough has formed. Stir in the cranberries and white chips by hand.

Step 3: Refrigerate the cookie dough for 1 hour. This will create a light, soft, chewy texture.

Step 4: Preheat your oven to 350 degrees. Then, line two baking sheets with silicone liners (or mist lightly with cooking spray.)

Step 5: Remove the chilled dough from fridge and roll pieces into tablespoon-sized balls. Then, place the cookie balls onto the cookie sheets about an inch apart from one another.

Step 6: Bake the cookies for 8-10 minutes. Be sure to rotate the pan halfway through to ensure that the cookies are baked evenly.

Step 7: Allow the cookies to set on the baking sheets for about 10 minutes. Then, serve and enjoy!

Eggnog Snickerdoodles

You’ll need: cup of butter (softened), 2 1/3 cups of sugar (divided), egg, teaspoon of vanilla or rum extract, cup of eggnog, 4 1/2 cups of flour, teaspoon of baking soda, teaspoon of salt, teaspoon of cream of tartar, 1/2 teaspoon of ground nutmeg

Step 2: In a large bowl, cream together the butter and 2 cups sugar until the mixture is light and fluffy. Then, beat in the egg and vanilla.

Step 3: In a separate bowl, sift together the flour, baking soda, salt, and cream of tartar.

Step 4: Next, add the flour mixture to the creamed mixture, adding in eggnog along the way. The dough will begin to thicken.

Step 5: Mix together 1/3 cup of sugar and 1/2 teaspoon of ground nutmeg in a small bowl.

Step 6: Shape the dough into rounded tablespoons. Then, roll the dough pieces in the sugar and nutmeg mixture.
