You’ll need: ¾ cup of unsalted butter, ½ cup of brown sugar, ½ cup of white sugar, 1 Tbsp of vanilla extract, 1 egg, 2 cups of all-purpose flour, 2 tsp of cornstarch, 1 tsp of baking soda, 1 cup of dried cranberries, 1 cup of white chocolate chips, a pinch of salt
Step 1: In a mixer, beat together the butter, brown sugar, and white sugar until light and fluffy. Then, beat the vanilla and egg into the mixture.
Step 2: Next, beat in the flour, cornstarch, baking soda, and a pinch of salt. Mix until a soft dough has formed. Stir in the cranberries and white chips by hand.
Step 3: Refrigerate the cookie dough for 1 hour. This will create a light, soft, chewy texture.
Step 4: Preheat your oven to 350 degrees. Then, line two baking sheets with silicone liners (or mist lightly with cooking spray.)

Step 1: Preheat your oven to 350 degrees.

You’ll need: 2/3 cup of shortening, 1 1/2 cups of light brown sugar (packed), 1 tablespoon of water, 1 teaspoon of vanilla, 2 eggs, 1 1/2 cups all-purpose flour, 1/3 cup of dark cocoa powder, 1/2 teaspoon of salt, 1/4 teaspoon of baking soda, 1 cup peppermint crunch baking chips, 1 cup semi-sweet or dark chocolate chips
Step 1: Preheat your oven to 375 degrees.
Step 2: In a large bowl, mix together the shortening and brown sugar. Then, mix in the water and vanilla. Afterward, add the eggs and stir until completely combined.
Step 3: In another bowl, whisk the flour, salt, cocoa powder, and baking soda together. Next, gradually add this dry mixture to the sugar and egg mixture.
Step 4: Stir in the peppermint crunch baking chips and the semi-sweet chocolate chips. Then, place round tablespoons of the cookie dough about 2 inches on an ungreased baking sheet.
Step 5: Finally, bake the cookies for 7 – 10 minutes. Allow them to cool and enjoy.
