The Thanksgiving holiday is right around the corner. Have you compiled a list of items that you would like to prepare? If you’re a little bit behind, there’s no need to worry. Step outside of the box with these unique Thanksgiving meals.
Baked Apples with Sausage Stuffing
You don’t have to choose between sweet and savory. Have them both with this flavorful recipe!
You’ll need: 1 tablespoon of oil or butter, 1 celery stalk (diced), 1/4 cup of finely diced onion, 1/2 package of sausage, 1 box of stuffing mix, 1 1/4 cup of unsalted chicken broth (or follow the stuffing mix directions if replacing the broth with water), 6-12 apples of your choice.
Step 1: Heat the oil in a medium or large frying pan over medium heat. Next, add the onion and celery and cook until softened. (This should take about 2-3 minutes.)
Step 2: Add the sausage to the skillet and cook thoroughly. (Be sure to break it up into small pieces.) Remove from heat.
Step 3: In a large bowl, stir together stuffing mix and sausage mixture. Then, the chicken broth or water. Stir the mixture together and set the mix aside when done.
Step 4: Start preparing the apples by first slicing the top portion off of each one.
Step 5: Use a spoon or a melon baller to scoop out the entire core of each apple.
Step 6: Spoon the stuffing into the apples and place them in a baking dish.
Step 7: Next, pour an additional 1/4 cup of broth over the apples. Afterward, add another 1/4 cup to the bottom of the dish.
Step 8: Finally, bake the stuffed apples uncovered at 350 degrees for about 30 minutes. Enjoy!
Apple Pie Salsa
Sweeten things up a bit with some delicious Apple Pie Salsa! This is a great twist on the All-American holiday dessert.
Salsa: 4 medium apples (diced), 2 teaspoons of lemon juice, 1 cup of light brown sugar, 2 tablespoons of butter, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 1 tablespoon of cornstarch, 2 teaspoons of vanilla, whipped cream (optional)
Cinnamon Chips: 1/4 cup of sugar, 1 tablespoon of cinnamon, 5 flour tortillas, 2 tablespoons of melted butter
To make the Apple Pie Salsa…
Step 1: Take a large pan and combine the apples, lemon juice, brown sugar, butter, cinnamon, and nutmeg.
Step 2: Cook the mixture over medium heat for 20 minutes, stirring occasionally.
Step 3: Next, stir in the cornstarch. Cook for two minutes, stirring occasionally.
Step 4: Remove the salsa from the heat. Then, stir in the vanilla. Serve warm. (Top with whipped cream just before serving.)
To make the Cinnamon Chips…
Step 1: Preheat your oven to 350 degrees.
Step 2: In small bowl, combine the sugar and cinnamon. Then, brush both sides of each tortilla with melted butter.
Step 3: Rub cinnamon-sugar mixture onto both sides of each tortilla. Next, cut the tortillas into wedges. Then, place them on the ungreased baking sheet.
Step 4: Bake the cinnamon chips for about 15 minutes until they are brown and crisp. Then, allow them to cool and enjoy them with your Apple Pie Salsa!
